Moving Update

No exciting pictures, recipes or stories today.  Just a quick update as we continue our journey to the Pacific Northwest.  We've been fortunate as the Lord has answered many of our prayers in the last few weeks.

*We had wonderful time with our Charleston family before we left
*We sold Peter's car even thought it wasn't for sale
*We have wonderful renters for our home and they even wanted to buy our couches that were for sale
*We found a place for Bear to stay (he will fly out to meet us when we have a home)
*Peter's Dad had quadruple by-pass surgery and we were able to be there to see him doing wonderfully in the hospital afterward
*We got to celebrate sweet Stafford's birthday with both families
*We have had countless friends inquire about our travels and pray for us!

Now a few prayer requests....

*To find a place to live in Washington
*To meet new friends
*To find new doctors, dentists, etc
*That Peter will have some time at home before having go on a long assignment (not sure the schedule or time frame for these types of things yet)
*For a wonderful church home
*For a safe, fun and enjoyable trip as we travel the rest of the way
*That we won't be so homesick

I've had a harder time than I thought I would with this transition.  I admit I am scared of the unknown.  Charleston has been home to me for 7 years and it was so hard to leave.  I love my dear friends there and they have been such a support to me during hard times in the last few years. 

I know God will answer all of these prayers in His way and His time.  Thank you to all my dear friends who are continually lifting us up in prayer!!  We really appreciate it!!

Boo on the Bleach

YAY!!! Update on this sad situation....e-friends on a Mom-Swap group I belonged to researched and found 2 websites where I could buy these!  He has almost grown out of them but I just loved them so much I couldn't pass them up!!!  So excited!!

We accidentally bleached 2 of my favorite outfits for the Little Guy.  If you see this....

Bacon Apple Bruschetta

I love a good bruschetta.  Bread...cheese...olives...tomato...artichokes....there are tons of combinations!  I usually think of Italian flavours when I hear bruschetta.  But this bacon and apple version has convinced me that a good old southern style is just as tasty and definitely easy!

Bacon Apple Bruschetta

1 baguette
2 Granny Smith apples
8-10 slices of bacon
1 log of sharp cheddar cheese
Dijon or spicy mustard

Cook bacon.  Slice cheese and apples (you want them to be about the size of the baguette slices).  Cut bacon into fourths.  Slice the baguette into 1/2 inch slices.  Place on a sheet pan and broil until top is crusty.  Spread Dijon or spicy mustard on each slice.  Add a slice of cheese, apple and bacon.  Broil until cheese is gooey.

See!!  I told you they were easy!!  They colors are pretty on this as well and it is just a perfect mix of sweet and salty.  This was by far the party favorite last weekend!!

Party Food Recipes

I promised multiple people I would post the recipes for the appetizers I served at Little Guy's birthday party.  Anyone who has tasted my food knows I have one motto, "It's SO easy!!".  I don't do anything that is hard.  I think you can make great tasting food that isn't time consuming or super expensive.  I'll be featuring a recipe each day this week!

Basil-Watermelon Skewers

This is another Giada adaptation.  It was easy in the cookbook and I made it even easier!  This recipe requires 4 or 5 ingredients depending on how you decide to make it.  This seems like a strange combination when you read it but I promise it tastes great! 

1 Watermelon
1 Box of Cherry or Grape Tomatoes
Fresh Basil
Balsamic Syrup

Cut the watermelon into 1-inch cubes.  Slice the cherry tomatoes in half.  Depending on the size of your basil you can either use a whole leaf or you can tear larger leaves into smaller pieces.  (I use basil about 4 or 5 times a week in my cooking.  We eat a lot of caprese salad in the summer with all of the fresh tomatoes and I also make homemade pesto.  Basil is expensive at the store so I suggest growing it at home in a pot.  I have 2 plants and they produce way more than I can use!)

Slide a basil leaf, 1 piece of tomato and 1 tomato onto a toothpick.  Repeat as many times as you want!  When you are finish pour the balsamic syrup over the skewers.  See, I told you it was easy!!  If you don't have balsamic syrup you can make your own.  Just reduce sugar and balsamic vinegar on the stove.

I like to add either mozzarella or feta cheese to the leftovers.  It makes a great summer salad and it is really healthy!

Stafford's Birthday--The Food Version

Stafford will turn 1 a couple of days after we arrive on the West Coast.  I wanted him to have a small party before we left because we love our friends so much here and they have been so special to us and to him during this first year of his life.  These are the people who brought us meals, visited us in the hospital, volunteered to babysit and love on him on a weekly basis.

I stuck with the theme from his room--blue & green and planes & pelicans.  My dear friend Allison helped me make his cake topper and cupcake toppers.  I was thankful my cake decorating class finally came in handy!!

Here is his cake & cupcakes

I wrapped two square gift boxes in silver wrapping paper.  I placed the cake on top and then the cupcakes around the edges.  It was easy, cheap and I thought it looked great!

I made a banner with the help of my friend Rachel & her supply of scrapbook paper!!  She cut out the shapes for me and I glued them together to make a banner that says "Happy Birthday Stafford".  

Here is the cake topper and Stafford's smash cake.  We used modeling chocolate which is easy to work with and tastes great!

I got this frame at one of Little Guy's baby showers. I love it!  I love it even more now that it is filled with adorable pictures of him from each month!!  We'll update the middle picture with a shot of him once he actually turns one.lo
I served the three things above plus a fruit plate & dip, veggie plate & dip, artichoke dip and a green punch.  We had a fabulous time visiting with friends and celebrating our special little boy!!  More pictures and recipes for the foods above to follow this week!!

Stafford's 11 Month Update

Dear Stafford,

I can hardly believe you are 11 months old!!  We just went to see our friend's new baby and as I held her I tried to imagine what it was like when you were that small.  It was hard.  It is amazing how much you have grown and changed in one short year.

Your biggest news this month is you finally have 2 teeth!!  They are growing in slowly and you do not like to show them to anyone!  You haven't been too fussy with them and so far it hasn't interrupted your sleeping at night.  I can't wait to see what you look like with a toothful grin!

You are still crawling around like a madman.  You want to go up the stairs all day long.  Mama has to block off the kitchen so you can't eat dog food and the stairs so you don't go up!  Daddy has been trying to teach you how to go down the stairs but so far you still go headfirst.  You also try to go headfirst off the bed, couch or any raised area!

You got your first kiss this month from your girlfriend Hannah.  She's almost a year older than you are and she loves you already!!  You also had an awesome time visiting with Daddy's family in Tennessee.  You got to stay with Mimi & Grandad and play with your cousins, aunts and uncles for a week.  You also go to visit with your great-grandpa.

It has been fun to watch your personality come out more and more.  You are still such a lover!  You cuddle and hug on Mama all day long.  You are still great about going to other people though and have fun in the nursery at church.  You show your sweet dimple to everyone.

The next time I update you'll have traveled through 11 states to reach our new home!  You'll celebrate your first birthday in a new state!

We love you so very much.  We are so honored to be your parents.  We pray everyday that you will follow Jesus and that we will be good parents to you!  We can't wait to see what you have in store for us!!

What I'm Loving

I'm having a glass totally empty kind of day so I'm forcing myself to sit down (ok I didn't really have to force myself because I'm happy to rest) and link up with "What I'm Loving Wednesday" because I know I have some blessings to count!  Time to fill that cup back up and regain my perspective!

I'm loving that even though we have to repair our car we have the money to do it!  I hate to spend the money we saved for emergencies especially when I am the one who cracked the bumper!  But that is what emergency money is for.  And I'm thankful we have it.

I'm thankful for this Little Guy and this Big Guy!

I'm thankful that my sweet friends Meghan and Andrew have a new baby girl!!  She was born this morning and both Mama & Baby are healthy!!  Yay!!!!!

I'm thankful for dear friends like this one...

who drove from New Orleans to Charleston to visit me!  This picture is from Christmas Day when she drove from Alabama to Tennessee to see me.  Such a good friend!  And we have such a good time!!  She helped me with a project for Little Guy's 1st birthday party that I'll share with you next week.

I'm thankful for a washer and dryer that work and that I was able to do 3 loads of laundry.  Last year at this time I was 8 months pregnant, had ankles the size of grapefruits and had a washer and dryer that didn't work. My dear friends Rachel & James came to the rescue and did all of our laundry for at least 2 weeks.  Amazing huh?  See what I mean when I say we have awesome friends here in Charleston?  They really are like family to me!

I'm thankful my dear KY friends the Porters brought me some of these....
so I can have a little taste of home when I'm feeling stressed.

Brookgreen Gardens

 I've always loved this statue along highway 17 just south of Myrtle Beach.  I wondered what it was and why it was there and finally found out!  Brookgreen Gardens is a sculpture garden and is the oldest one in the US. It was established in the 30s and contains over 1400 sculptures by more than 350 artists.

We were driving home from visiting some friends last weekend and I figured it would be our last chance to explore the gardens behind the statue so we decided to stop.  I was so pleased!  The gardens were beautiful and well maintained.  There were plenty of beautiful flowers in bloom and there was even a little zoo!  If you're headed to coastal South Carolina this is a must-see!

I love the 4th of July.

I love fireworks on the 4th of July.

Fireworks on the 4th of July haven't always been my favorite thing.  I'm sure I liked them in the past but since meeting my sweet husband and embarking on this journey that is "military life" together they've taken on a whole new meaning.

If you haven't seen the movie "The Sandlot" you should.  It's a childhood favorite of mine; one that I can't wait to sit down and watch with the Little Guy someday.  My favorite part is the scene where they play a night game.  During their game the fireworks start.  The boys are fascinated by the starbursts and bright colors and their faces show what can only be called awe.  Fireworks are so much bigger than real life.


We attended a fabulous party put on by our little town along the riverbanks of the Cooper River.  There were jump castles, a band and funnel cakes.  And of course there were fireworks.  I get a little teary eyed when I see fireworks.  There is something about the colors and the shapes that just "wows" me.  And listening to popular patriotic songs with words like "God bless the USA" and "from sea to shining sea" just give me goosebumps.


I'm so thankful to live in a free country.  I'm so thankful for my many blessings!  I'm so thankful for the men and women who have fought for the freedom that makes this country so great.  I'm proud to be a small part of that.  I don't always like sharing my husband for the "cause".  But ultimately I know that is what he is called to do and therefore so am I.

It was one of those perfect nights.  I've been having a lot of those lately.  I feel like it is the Lord's way of saying everything is going to be ok.  I'm leaving Charleston with all of these great memories but I'm leaving because I know that is His will for my life.

I don't think I'll ever look at fireworks the same way.

2nd Quarter Top Five Photos

Once again Amber's Articles, ClickItUpANotch and Naptime Momtog are hosting the Quarterly Top Five photo extravaganza!  You don't have to be an awesome photographer to enter!  You just have to love to take pictures and show them off!  Here are my favorite pictures of the Little Guy from the past 3 months.

I love this sweet smile.  This little boy is SUCH a smiley baby.  I rarely catch him with a frown and he loves the camera.  His latest trick is pulling up and playing in the kitchen island cabinets.  

I took this a couple of weeks ago because I wanted to make sure I got a picture of Little Guy in his flight jacket.  It has a sweet story to go along with it.  He has the pelican in this one because that is the mascot for Daddy's flying squadron.

Bear and the Little Guy are super good friends!  I love this picture because they are just both looking at each other and can't figure out how to get to the other.  

This picture is from the first day that Little Guy learned how to pull himself up in his crib.  I went in after a nap and he was standing there looking at me.  I love the so happy to see you look on his face and his wild naptime hair!

I can't get over these awesome pants.  Little Guy definitely knows how to rock the seersucker.  These pants are from Mimi.....she has great taste!
