Curry Turkey Meatballs

This is a new favorite at our house.  Easy and healthy!

1 pound ground turkey
1/2 cup breadcrumbs (I would suggest taking a slice of break and cubing it)
1 green apple, cored, peeled & shredded
1 onion shredded 
11/2 tsp curry powder
1 egg, beaten lightly
1tsp salt
3/4 tsp pepper
3/4 cup shredded cheddar cheese

I shred my onion and apple in my food processor but you could easily use a grater.  Mix all of your ingredients well and then make large meatballs out of mixture.  I usually cook my meatballs in a mini muffin tin (if I'm making small ones) or a regular muff tin for larger ones!  These meatballs are very wet because of the apple and onion.  I suggest starting them in a muffin tin and then finishing them on a cookie sheet once some of the moisture has tooked out or even on the stovetop.  The taste great regardless!

Bake meatball mixture at 375 for 16 minutes and then finish on stovetop or cookie sheet until brown.  You can top with extra cheddar cheese if you want but I prefer it without.

All three kids gobbled these up.  Get it?

Give Me Words...

It's no secret that we have a little Aaron Shust obsession in our house.  In our defense we do have a little bit of a personal connection.  He's an old high school friend of mine.  If you haven't heard his music do yourself a favor and go ahead now and buy every album he has ever made.  Because they are awesome and God-glorifying and you won't regret it.

Anyway.  He released his first album in 2007 and one of the tracks is just a few short chords as an intro to another song.  It says,

Give me words to speak,
Don't let my spirit sleep
Cause I can't think of anything worth saying

He developed that chorus into a song for a later album but it's those words just keep rolling through my head today.

I can't think of anything worth saying.

It's the easy way out for me.  Not that the easy way is really easy.  Life hurts right now.  It's painful to be a part of.  It's even more painful to watch.  And the thing about it, is what is going on in our family is just a glimpse of the pain that this world is filled with.  And it's just overwhelming to me.  I want to crawl in a hole.  I want to pretend that the hurt isn't there.  The lost children.  The miscarriages.  The broken homes.  The cancer.  The loneliness.  The hunger.  The hurt.  The darkness that threatens to consume us if we don't speak.  If we let our spirits sleep.

So I won't take the easy way out.

I choose to praise Him today.  To believe that He IS who He says He is.  Because if He isn't, what in the world am I living for?

I choose life today.  I choose light.  I choose Jesus.  Because when I don't have anything worth saying HE does.  When I don't understand life, He says trust me.

I've always loved these verses in Isaiah 55..

“For my thoughts are not your thoughts,
    neither are your ways my ways,”
declares the Lord.
“As the heavens are higher than the earth,
    so are my ways higher than your ways
    and my thoughts than your thoughts.

Right now life doesn't make sense.  But knowing that I can't know the mind of God is a comfort. Somehow over the years I missed verse 2 and it's speaking for me.

Why spend money on what is not bread,
    and your labor on what does not satisfy?
Listen, listen to me, and eat what is good,
    and you will delight in the richest of fare.

God is saying to us can try what you want....your way...the way of the world...whatever makes you feel better or happy.  But it won't satisfy.  Don't waste your time trying to make sense of life without me in it.  It's won't make sense.  It's won't satisfy.  It's a waste.

So today I will listen to him.  I will eat what is good.  I will delight in him.  Even when it's hard.  Even when I don't have the words.

Give me words to speak Lord.

Kelsey's 10 Month Update

Kelsey Jane,

As always it is crazy to me that another month has passed.  Every day with you is a joy.  You have to be the sweetest and most even tempered child there ever was.  You are rarely fussy.  You nap easily and you are content to play.  You have especially enjoyed playing downstairs with your brothers.  Sometimes they leave the gate open and out!  You are already an expert at climbing those stairs!

Eating has started to be a chore because you will not stay eating in your high chair!  You are just busy busy all the time.  When you do take time to eat you are still willing to eat most anything. I believe meat and veggies are your favorites (are you sure you are my child??)  You love it when Mama makes soup and gives you all the yummy veggies!

This is your new favorite trick.  You think you are big stuff climbing up in the rocking chair and rocking back and forth.  You've figured out how to get in the chair and back out!

You love when Daddy comes home. As soon as you hear the garage door you go crawling toward the garage to see him.  I love the look on your face when he appears at the door.  Pure adoration.  It's hard not to love your Daddy.

You are wearing size 9 month clothes finally and we've just switched you to size 2 diapers.  I don't think I did a great job of anticipating your size when I bought all those cute pink clothes last year!  We will have to see if you hit a growth spurt!

Another thing you love to do is sit in the bathroom while I get ready.  I love chatting with you and seeing what you are scheming to get into next!

You are into anything and everything you can get your hands on.  Your brothers got an easel for Christmas and you didn't want to be left out!

You are the perfect addition to our family Kelsey Jane.  I love watching you hit these milestones each month but I sure wish the time would go a little slower.  Can't believe you are 10 months already!!

Kelsey's 9 Month Update

Kelsey Baby,

You are growing up so fast!!  Mama stays behind and I think because of that you seem to grow and change even faster than I think you are.  It seems like just yesterday that you were such a tiny little thing and now you are getting to be such a big girl!

You have been standing whenever you can this month.  Your favorite place to play is in the refrigerator.  I often find you in there...sometimes you are trying to get something out.  But usually you are just exploring.

This was a fun month.  Full of travel to visit family and your first Christmas.

You got two new teeth (the two on top) without Mama even realizing it!  You are such a sweet, easygoing girl!  You still take at least 2 naps a day, usually around 2 hours each.  You are still wearing size 6 month clothes but Mama is hoping to move you up to some new sizes soon!  You have worn a few 9 month things! You are still in size 1 diapers!

You will each just about anything.  You are still nursing 4 times a day and eating 3 meals a day.  

This rocking horse is definitely your favorite toy.  I find you standing on it or around it often!

Sweet girl we sure love you!  You are so loved by your brothers and your Mama & Daddy.  We are sure blessed to have you in our family!  We can't wait to continue to watch you grow and change over the next few months!
