Party Food Recipes

I promised multiple people I would post the recipes for the appetizers I served at Little Guy's birthday party.  Anyone who has tasted my food knows I have one motto, "It's SO easy!!".  I don't do anything that is hard.  I think you can make great tasting food that isn't time consuming or super expensive.  I'll be featuring a recipe each day this week!


Basil-Watermelon Skewers


This is another Giada adaptation.  It was easy in the cookbook and I made it even easier!  This recipe requires 4 or 5 ingredients depending on how you decide to make it.  This seems like a strange combination when you read it but I promise it tastes great! 

1 Watermelon
1 Box of Cherry or Grape Tomatoes
Fresh Basil
Balsamic Syrup

Cut the watermelon into 1-inch cubes.  Slice the cherry tomatoes in half.  Depending on the size of your basil you can either use a whole leaf or you can tear larger leaves into smaller pieces.  (I use basil about 4 or 5 times a week in my cooking.  We eat a lot of caprese salad in the summer with all of the fresh tomatoes and I also make homemade pesto.  Basil is expensive at the store so I suggest growing it at home in a pot.  I have 2 plants and they produce way more than I can use!)

Slide a basil leaf, 1 piece of tomato and 1 tomato onto a toothpick.  Repeat as many times as you want!  When you are finish pour the balsamic syrup over the skewers.  See, I told you it was easy!!  If you don't have balsamic syrup you can make your own.  Just reduce sugar and balsamic vinegar on the stove.

I like to add either mozzarella or feta cheese to the leftovers.  It makes a great summer salad and it is really healthy!

  2. This looks really good! Twice, I recently had watermelon salad (spinach with feta, watermelon, nuts and balsamic vinegarette). So delicious, this looks like a good variation of that! YUM!
