Chicken Avocado Soup

  

I love eating anything with a spoon.  Ice cream, cereal, yogurt.  I can eat none of those things currently unless I cheat on my diet so I'm making up for it by eating soup.  I made 3 different soups this past week and they were all amazing!!

This soup is from one of my favorites, Skinny Taste!  Gina takes regular recipes and makes a healthier version.  If you follow weight watchers you can see how many point are in the recipe and she posts as much nutritional information as possible.  If you haven't checked out her website you should!

Chicken Avocado Soup

5 cups chicken broth
2 cups shredded chicken breast (I used 2 breasts)
1 tomato, diced
2 garlic cloves, minced
1 and 1/2 cup scallions, finely chopped
2 ripe avocados, diced
1/2 cup cilantro
2 tsp olive oil
salt & pepper to taste
pinch cumin
pinch chipotle chili pepper

If you already have pre-cooked chicken great!  If not, boil your chicken in the chicken broth for about 15-20 minutes.  Make sure you don't over cook! 

While your chicken is boiling saute your garlic and 1 cup of scallions in a pan.  Then add your tomatoes and cook until they are soft.  You can also chop your avocados now too.

After you take your chicken out of the broth add the scallion mixture.  Bring to a boil and add your spices.  Then simmer for 15-20 minutes covered.

Shred your chicken.  Then fill four bowls with 1/2 cup chicken, 1/2 an avocado, about a Tbsp of scallions (that hadn't been sauteed) and the cilantro. Then cover with the chicken broth.  

As you can see from the picture I didn't chop my cilantro but you certainly could do that!  The original recipe also calls for lime wedges but I didn't even think they were needed.  

This soup was SO fresh tasting and delicious!  It was light and filling at the same time.  I have to admit that I ended up making it twice last week because it was so good!!
