Sweet Potato & Lime Soup

For the most when I cook I have an idea in my head of how something is going to taste.  I'm not sure if that is normal or weird.  But it's usually how I decide if I want to make a recipe or not.  I can imagine the flavour combinations and the textures.  And usually I'm right!  But this recipe left me clueless as to whether I'd like it or not!  Happily it turned out to be a healthy, tasty and gorgeous soup!

Sweet Potato & Lime Soup
(Adapted from PaleoDietLifestyle)

3 medium sweet potatoes, peel and cut into chunks
5 cups chicken stock
1/2 tsp diced ginger
3/4 cup coconut milk
1/2 cup water
juice of one small lime
1 tsp chipotle chili pepper
1 tsp cumin
salt & pepper to taste
cilantro for garnish

Combine the sweet potatoes, chicken stock and ginger in a sauce pan and simmer until potatoes are cooked the whole way through.  Remove the soup from the heat and blend with a hand mixer or in a blender.  Return to the pot and add coconut milk, water, lime and spices.

I do not suggest serving this soup right away.  It is very runny at first so I refrigerated it overnight and then served it the next day with chopped cilantro on top.  It was delicious!  The cumin and chipotle give it just enough kick to make it a warm inviting dish.  And it is so smooth!  It is also paleo compliant!

You could also serve this overtop chicken & rice for a heartier supper.
