Zucchini-Olive Couscous
Here it is....the recipe you didn't know you are dying to have!! I prepared this recipe for our community group this week with a bit of trepidation. We have a few adventurous eaters in our group and a few non-adventurous eaters. I tend to be on the FAR side of adventurous so I don't always trust my own judgement when picking out something for the not-so. Thankfully this dish seemed to be a hit for most and sadly we didn't have much leftover! I was looking forward to eating it for the rest of the week! I liked it so much that I bought the ingredients again during our weekend grocery trip.
So without further ado...
Zucchini-Olive Couscous
2 garlic cloves, minced
1 T. olive oil
3 cup chicken broth
1 cup green olives, cut up
3 medium zucchini, halved lengthwise & thinly sliced
1 10-oz package plain couscous
2 tsp lemon zest
1/2 tsp black pepper
1/2 cup sliced green onion
2 T sniped fresh parsley
In a large saucepan (try one with taller sides if you have it) heat olive oil and cook garlic for 1 minute. Add broth and olives and bring it to a boil. Once it is boiling stir in your zucchini, couscous, lemon zest and pepper. Cover and take it off of the heat. Let it stand for at least 5 minutes.
To serve stir in your green onions and parsley!
This is SO easy and SO yummy. If you aren't in the habit of making couscous with chicken broth give it a try. I usually use water but the chicken broth just takes it to another level and adds a little dimension to the flavour of the dish. This was hearty and light and I paired it with the fabulous Goat-Cheese Chicken Sandwiches from last week. It's also really colorful and brightens your plate of food regardless of what you serve it with!
