Popeye & Olive Oil Pitas

Unless I have really planned ahead (which, by the way, never happens) then sometimes Sunday lunch leaves a little to be desired.  Lately I've been trying to make soup once a week but the last two weeks we liked the soup so much there wasn't any left for Sunday!

So today I made these yummy pitas.  No pictures today....but these are easy!

Popeye & Olive Oil Pitas

3 cups spinach
1 small red onion thinly sliced
1 tsp lime juice
1 tsp lime zest
1/4 tsp salt
1/4 tsp pepper
2 T. mayo
1/4 cup Extra Virgin olive oil
2 avocados, sliced
4 pocket pitas
6 oz. sharp white cheddar

Toss spinach & onions in a bowl.  In a mixing bowl combine lime juice, zest, salt, pepper, mayo and evoo.  Stuff your pitas with sliced avocados & cheese.  Then dress your spinach & onions with the lime dressing and stuff in pitas.

That's it!  These are seriously good.  If you are one of those people, or have one of those husbands, who MUST have meat at every meal then I'd suggest nice deli turkey.
