Like Leeks?
Leeks. They sound kind of weird and taste kind of wonderful. If you aren't cooking with leeks you should start now! Leeks are a member of the onion and garlic family. They look like large scallions but taste much sweeter. To get you started on your leek adventure try this yummy Leek Soup with Brie.
Ingredients
6 medium leeks, thinly sliced
1/2 lb sliced fresh mushrooms
1 garlic clove, minced
1/2 cup heavy whipping cream
4 cups chicken broth
1/2 teaspoon tarragon
1/4 teaspoon white pepper
4 T butter
7 & 1/2 teaspoons all-purpose flour

Thinly slice your leeks. Only the white part and very light green part should be used. The dark green tips are really bitter. Add your leeks, mushrooms, garlic, tarragon, white pepper and butter to a large pot or dutch oven. Saute for 8-10 minutes or until the vegetables are tender

Stir in flour until blended; gradually add broth and cream. Bring to a boil; cook and stir for 2 minutes or until thickened.
Make sure you have plenty of helpers in the kitchen!!
Slice your french bread & brie. Lightly butter the bread and place sliced brie on each piece. Broil until cheese is melted. Serve with soup!
This soup is velvety and creamy and would make the perfect starter to any meal! I suggest doubling the recipe because it's so good it won't last very long!
