Food!!

This little face brings me a LOT of happiness!  I  took this shot during Stafford's first rice cereal experience.  I think the vast majority ended up on his chin.  Since then we're making some progress and tonight we're going to have green beans!  He tasted them yesterday when I made them and seemed to love them!  We'll have the camera out for that one too so I'm sure a series of what Stafford has eaten for dinner and how much of it has landed on his chin is soon to come!

I'm trying to find a few places to "link up" to each week wtih pictures.  I want to get better at photography and the only way I can is by practicing. 

One place I have been practicing is the kitchen.  We had Popeye Pitas and this new recipe, Zucchini Quiche for dinner last night.  This is another winner!!!


Zucchini Quiche

4 cups zucchini thinly sliced
1 can artichoke hearts
1 onion thinly sliced
3 T. butter
2 eggs
2 tsp parsley dried flakes
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp dried basil
1/2 tsp oregano
1/4 tsp pepper
2 cups mozzarella shredded
2 T. mustard prepared
1 pastry shell

In a large skillet, saute the zucchini, artichokes and onion in butter until tender; drain.  In a large bowl, whisk the eggs and spices. Stir in cheese and zucchini mixture. Spread mustard over pastry shell (I squirted the mustard on the back of a spoon) and add egg mixture.
Bake, uncovered, at 400* for 35-40 minutes. Cover loosely with foil after 25 minutes if needed to prevent overbrowning. Let stand for 5 minutes before cutting.

This is heartyenough for dinner but pretty enough for a luncheon or shower.

Thanks to my sister Liz who introduced me to this one.  It's going to become a staple in our house!!

    Glad you are finding some places to link up. It is a lot of fun and does challenge your photog skills. I know a ton of them, if you need any ideas.
