Baja Chicken Tacos

This is the recipe you've been waiting your whole life for.  Well, at least a week because that is when I first mentioned it.  Seriously I want to eat this everyday.  Or maybe every other day.  I'll alternate days between this and my chicken pot pie.

The boys and I try to eat lunch once a week with Peter.  His schedule is pretty busy and lately he has been getting home late.  Between that and him being gone for so long we just can't get enough time together.  Last week we decided to try what I known as "legit taco".  Apparently there is also a "shady taco" as well.  It has nothing to do with the food, just the outward appearance of the establishment.  Don't worry, shady taco is on the agenda for next week.

Sadly I've been avoiding dairy and this means no sour cream and no cheese for me.  Sigh.  I ordered chicken tacos because it looked like it would be enough food to fill me up and to share with the Little Guy.  When my plate came I thought it looked fine.  I wasn't particularly excited about it but I wasn't turned off either.  But then I took my first bite....

heaven in a corn tortilla.  Seriously!!

So because I knew I would be a taco addict from that point on I knew I needed to try to recreate the recipe at home.


Baja Chicken Tacos

1 packet McCormick Tinga De Pollo
1 8 oz can of tomato sauce
1 small onion, chopped
1/4 to 1/3 chopped green cabbage chopped
1 tomato, chopped
1 handful cilantro, chopped
1/4 to 1/3 purple onion, chopped
2-4 chicken breasts, cubed
1/2 cup water
corn or flour tortillas

Chop onions and saute in a little bit of olive oil.  Mix seasoning, water and tomato sauce and add to mixture. Add cubed chicken breasts.  Saute until chicken is fully cooked.

To make the slaw simply chop the tomato, onion, cilantro and cabbage.  I added a tiny bit of lemon juice to keep it fresh.  Depending on the ingredients you prefer you can add more or less of one or the other.  

As usual that is it!  Easy and super yummy!!  These are a tad spicy but seriously addicting.  And they are really good for you!  

We ate these with a side of black beans and avocado but you could always add rice to make the meal a little more filling.  Personally I'd rather eat about 17 more tacos!!
