White Chicken Chili


The chilly weather here has me making soup like it's my job.  I also find that it's helpful to make soup once or twice a week because I can eat leftovers for lunch or dinner when Peter isn't home.  I also find it easy to adapt most soups (as long as they aren't cream based) to the paleo diet.

This is an awesome white chili that is sure to warm you up!  It comes from our church cookbook that is almost 20 years old.

White Chicken Chili

2 Tbsp olive oil
2 pounds chicken breasts, cubed
1/2 cup onion, chopped
2 cups chicken broth
2 4 oz cans green chilies
2 tsp garlic powder
2 tsp cumin
1 tsp oregano
1 tsp cilantro
2 cans white kidney beans, undrained

Heat olive oil in a pot and add your onion.  Cook for 2-3 minutes or until translucent.  Add chicken and cook for 4-5 minutes or until chicken is cooked through.  Add broth, chilies and spices.  Simmer for 30 minutes and then add beans.  Or don't if you are following paleo!  Simmer 10 more minutes.

If you'd like you can garnish with cheese and green onions but I find it yummy and satisfying without.  Plus no cheese on paleo!!

I love this soup.  I am a little obsessed with cumin right now so I put a little more in.  You can also add a little salt and pepper to taste.
