Brunswick Stew


I'm not sure if this fabulous recipe qualifies as a soup or a stew.  Although at our house right now we are calling soup "poop" so maybe we'll stick with stew!  Regardless of what you call it this is a fabulous and healthy chicken soup/stew!

Brunswick  Stew

1 package of chicken parts
1 large can tomatoes
2 large onions-chopped
1 large can of yellow corn
1 package of okra
1 package of lima beans
1 Tbsp Worchestershire  sauce
1 small bottle of ketchup
dash of Tobasco
pinch of salt and pepper

Defrost your chicken parts (I always keep some in the freezer just in case I need them!) and boil them until the chicken is cooked.  Remove the chicken from the bone and reserve the liquid stock. If you want more of a soup then use all of the liquid.  If you want more of a stew you can freeze the leftover stock.

Add the chopped chicken,  tomatoes, corn, okra, onions and beans to the pot.  I drain the corn but not the tomatoes.  The recipe calls fora small bottle of ketchup.  don't think it needs an entire bottle.  I used about  1/2 a cup.  I suggest mixing all the ingredients and then adding the ketchup at the end.   Then you can put in more or less and taste it as you go.

As usual that is it!  Simple and delicious!  I drain this when I feed it to the little guy so he can pick up the pieces individually.  For some reason he doesn't like to eat "poop" off of a spoon but he will eat it with his fingers.
