Paleo Sausage Egg Muffins

When I'm trying to stick to my Paleo diet I struggle with having to cook for every meal.  My boys have things to do and people to see in the morning and sometimes I just don't have time to cook a hot breakfast.  This is as close to a "grab and go" breakfast as I can get!  You can be creative with these and tailor the recipe to your liking.

Sausage Egg Muffins

6 eggs
1/2 pound of sausage (I use Isernio's chicken sausage)
3 chopped green onions
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cayenne or other chili powder

Brown sausage in a skillet.  While it is browning chop your onions and beat your eggs until combined.  Combine all ingredients in a bowl.  Fill a muffin tin with the egg mixture and bake on 350 for about 10 minutes.  I use one of those flexible muffin tins so I've been able to get away with not spraying it but you might want to lightly spray your muffin tin with olive oil or your cooking spray of choice so they don't stick.

You could add anything to these that you'd put in an omelet!  Green peppers or red peppers (I hate them so I don't use them but they are SO healthy and I know if you like them they would definitely enhance this dish. Plus you get the added benefit of more veggies!), onions, sweet potato chunks, jalapeno, tomato, avocado....you get the picture!  If you aren't eating paleo but are just trying to watch what you eat you could certainly sprinkle a bit of cheese on top but not too much!

My Empty Planner

Sometimes I don't set goals for myself because I'm afraid I can't keep them.  I have a planner and it's empty.  It stresses me out to write things down because something might change.

Well today something is going to change.

I'm going to fill out my planner with some goals.  I have a few lists floating around here and there.  Books I want to read.  Things I want to do.  But nothing concrete.

Sometimes here in this space...MY space....I'm afraid to be honest.  I'm afraid to admit my shortcomings because I don't want people to think less of me.  I'm afraid to write them down because I don't want to think less of me.  I imagine someone sitting there reading my blog and thinking...

she's been saying she was going to lose weight for a year now
she posted that list of books and she hasn't read any of them
she always says she is going to post a recipe or this or that and never follows through

I know that I'm giving myself a little too much credit.  Most people out there, even those that love me dearly, have way too much on their plate than to wonder why I'm not following through with a recipe post or a weight loss plan.  But I know it.  And it drive me crazy.

So.  I'm committing today.

To  eating healthier.

To exercising more often.

To spending more and consistent time in the word.

To making some goals.

To accomplishing some goals.

I've come a long way in a year and I don't discount that.  I'm proud of it.  But it's time to finish what I started!

WIWW--The "I Need To Get Dressed More Often" Version

The mirror has a new home and I think it's staying there for a while.  I should start naming these posts "Where The Mirror Is Wednesday" since that seems to be my secondary focus.

Anyway...on to the good stuff.

I am enjoying things that fit that haven't fit for a long time!  This black shirt is one of them.  It's hard to see the details since my phone is blocking them all (I didn't notice this until now) but it has awesome ruffles!  Been waiting to wear this one for a couple of years!

I'm pretty sure these shoes were a Marshall's or TJ Maxx find last year.  I wish I had purchased every single pair in my size.  I wear them all the time.  All the time.  And I'm going to be mad when the finally fall apart.  Recently I found a pair on ebay and I waited too long and now they are gone. I'm kicking myself about it!!  So...

Recently I hosted a clothing swap with some of my girlfriends.  We all brought clothes that were very gently used ie in great shape.  We ate lots of good food and all went home with something new.  This dress is something I would never have tried on at the store.  I generally follow the following rules...

1. no prints
2. no capped sleeves

This has both.

But I THINK it works!

By my post you might think I only got dressed twice this week and you might be right.  Here's to less yoga pants and more skinny jeans next week.  Shorts rather.  Because I think summer is FINALLY going to arrive here in Tacoma!

May Vegucation--Summer Squash


There are many varieties of summer squash out there but I have to say that zucchini is my favorite.  It is so very versatile.  I have quite a few zucchini recipes already on my blog so I wanted to try something new.  In my quest to continually improve our eating habits I recently bought a mandolin.  I've wanted one for a while and after watching too many episode of Chopped & Iron Chef it became clear to me that I couldn't be healthy without one.  Ha!

My favorite thing to make with the mandolin is zucchini noodles.  They are a fabulous substitution for pasta and I prefer the taste to spaghetti squash.

Zucchini Noodle Stir Fry

1 large zucchini
pinch of salt
1 tsp extra virgin olive oil
1/2 to 1 T soy sauce
1 tsp garlic-chili sauce
2 cloves garlic, chopped
9 shrimp

This is a one person meal or a small side for two people.

Use your mandolin to make the noodles.  If you don't have a mandolin you can slice a zucchini longways and then cut it into very small strips.  It just takes much longer (hence my NEED for this little gadget).  

Heat your olive oil on low.  Mix soy sauce, salt chili sauce and garlic in a small bowl.  Toss with noodles.  Add noodles to the pan and saute until cooked through.  Remove noodles and add shrimp.  Cook until they are pink.

You'll want to play around with the amount of chili sauce and soy sauce you use.  I like this a little more spicy but Peter does not.  So I definitely use less if we are going to share this.  I would also tend to use only 1/2 T of soy but have used 1 T if the zucchini was quite large.

You could add any vegetable to this.  I've added carrots and onions.  It kind of reminds me of the veggies you get if you eat at a Japanese steak house.  Yum!!

Y'all.  It's STILL not summer here.  I mean I guess it is officially summer since it is after June 21st.  But it's rainy and chilly and not summery.  I decided to put the boy's winter/spring clothes away tonight and just run with it.  Hopefully I won't regret it.  I just can't wait to see them in all of their cute little t-shirts and shorts!

I'm feeling a bit stuck in the kitchen.  I guess I shouldn't admit that since I'm kind of a food person.  I've been trying so hard to be healthy and I'm in a rut!  I need some kitchen inspiration!!

I share this post about my sweet guy who is almost 3.  In that post I shared about how we had been successful at giving up the paci.  At 10pm on Sunday night I am eating my words.  Off to put my little one back in bed...AGAIN!!

Spicy Cheese Crackers



I've been experimenting lately with some of our favorite snacks.  So far these fruit snacks have been a hit and now we've moved on to cheese crackers! A friend of mine tried this recipe and after some tweaking I have a pretty yummy substitute for your store bought, aquatic shaped, cheesy cracker!

You'll need...

8 oz of sharp cheddar
4 T butter, cubed
1 cup flour
1 Tsp homemade taco seasoning
2 T cold water

Grate your cheese.  Pulse everything except the water in the food processor until it is course.  Pulse in water slowly.  Remove the dough from the processor and mold into a ball.  Wrap in plastic and chill in the refrigerator for at least 20 minutes.

Roll out the dough.  The first couple of times I made this I used various small items to cut out shapes.  It was fairly time consuming.  The next time I make this I plan to roll it out and then cut it with a knife into squares.  It might not be as cute but part of my reasoning for making things at home is to be healthier in a timely and cost effective fashion.  I did NOT find cutting out tons of tiny goldfish or circles time effective!!

Bake at 350 degrees for about 15 minutes.

These are SO yummy!!  The problem with making them is they disappear WAY too quickly!  I found the taco seasoning really gave them some bite.  You could use any type of seasoning that you wanted.

Here is the recipe for taco seasoning that I used (taken from Allrecipes)

1 T chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper
1/4 tsp dried oregano
1/2 tsp paprika
1 & 1/2 tsp cumin
1 tsp sea salt
1 tsp black pepper

This will make enough for many cheese cracker recipes!

LIttle Guy Loving Life

In six short weeks we'll have a 3 year old.  It's hard to believe.  I really try to enjoy each day with this Little Guy (although the terrible twos/threes sometimes make it challenging).  I know that I'm going to blink and he's going to be going off to school.  We fill our days with vehicles, animals and adventures.

This kid is hilarious.  He's a tad smart for his own good and because of that he gets into trouble.  Here are some of my favorite Stafford moments and isms from the last few months.



I love the joy on his face in this photo.  He loves "underdog" and asks to go to the playground quite a bit.  Thankfully it's one block away so we spend a lot of afternoons there.


Everytime he climbs up into my arms he hugs me and says, "I love you sooooo much!"


I will NEVER turn down an offer to hold hands with this cute little man.

I told Stafford we needed to look for a missing piece of the train track. He said maybe a Mouseketool could help.



I enjoy the conversations that he has with himself.  He often says what he wants us to say.

S-we could watch Thomas. We could ALL watch Thomas. We could use the remote and watch Thomas on the tb. We could watch a mobie. We could ALL watch a mobie 

Pause. Answering himself. 

S-Ok. We can watch Thomas.


Poor guy.  We switched to 3T clothes a while back and while he was playing at the Y his pants came right off!

I caught Stafford going potty standing up today. I was surprised and said..."Are you going potty standing up? You are doing such a great job!"

"Yeah" he replied with a huge grin on his face, clearly very proud. "Congratulations!!"

This picture was taken at our annual JR Daffodil parade.  We ran to get me a flower.  He talks about parades all the time now and refers to seeing a tuba.

I started the Insanity workout recently and as I'm flailing around trying to finish I hear Stafford call out...

Look at you go, Mama!!



Stafford really likes girls.  He is often more excited to see his friend's Mommys than his friends.  He will tell me that certain people are cute.  Recently I was talking to my friend Erin on the phone and he got this funny look on his face and said, "Is that Erin?  Erin is so cute!!"

Peter just asked Stafford to come help him in the kitchen. His response...

It sounds like someone's in trouble!! Thanks for calling me!!

Every time the sun is out Stafford tells me his eyes are hot. He also told me he needed an umbrella today because his hair was blowing in the wind.




One of Stafford's favorite Christmas presents was a Leapfrog school bus. One morning he got into bed with me and peeked out the window. "Look Mama!! A rockin' school bus!!!"

He refers often to Bigbees (the city bus), school buses, logging trucks, front loaders....the list goes on and on.

Stafford keeps asking to watch "Veggie Tales" but he pronounces "Veggie" like the island of Fiji....Viji Tales


Stafford just yelled out the front door at Peter who was mowing the lawn..."Good racing Daddy! Good racing the lawnmower!!"

A few months ago Stafford helped us put together a shelf.  Stafford kept saying "we will all work together" "Mama do you want to work together with me?" "We need this piece Daddy."  He is definitely into teamwork!!


Stafford just got out of bed and yelled at the top of the stairs, "Mama!! Do you hear a dangerous robot?!?!"


This guy has gotten really good at recognizing airplanes.  He knows Daddy's plane by sight and I think by sound!  He gets so excited whenever he sees one flying overhead.

I want to go on an adventure. What are we waiting for Mama?!?


Bought the boys shoes for the summer and S is wearing his tonight. He put them on and then said...I look great!!

Stafford's favorite show is Go Diego! Go!  It's a really cute show and he has learned quite a bit about animals.  His favorite animal to see at the zoo is the Tapir.  He makes "whistling" noises when he sees it.

Recently we were on a walk and he told me his favorite snack was "baaboo."  I couldn't figure out what he was talking about until he told me he likes to eat his favorite snack with pandas.

Stafford-Stop we need to pray. 

Peter- Ok, do you want to pray?

Stafford- Yes. (Holds hands out for us to grab.) Thank you God for juice. Thank you God for apples and peanut butter. In Jesus name, Amen.

This wastepaper basket is quite popular at our house.  While wearing it Stafford told me, "Look Mama, I'm stuck in a neck."  He also informs me quite often that he hurts his "fronthead" and we've been seeing a lot of "bungle bees" in the "rhorhodenden" outside of our house.  In addition he put his milk in the "refridgidgidger."

The other day he was hurt and he looked up at me and said, "I'm sorry Mama.  I didn't mean to hit me."


We pray for a different country each day and I love listening to this little guy lift up other nations.  The other day he came down for breakfast and he grabbed the book and said "who are we praying for today?"

Also thanking God recently for....his family...pizza....the lawnmower.





Recently we traded in all of his pacis for a bike.  It's adorable and so far the transition has been pretty easy.  I'm so proud of him!

Overheard while I was making dinner...."Come on boys!!  Let's play ball!!"


This week was the "best week ever".  He got to drive the city bus and a fire truck in our neighborhood.  Transportation is definitely huge at our house!






This kid brings so much joy and happiness to our lives.  He is clever and funny.  He is a cuddler and I love his sweet little dimples.  I love watching his personality develop and can't wait to see what the next few months can bring.  I know it will be hilarious!

I still haven't figured out a good spot in our house to put the mirror. Maybe I need to teach my toddler how to take pictures of me.
